Baked Oatmeal with Banana and Fig

Sometimes I want to bake oatmeal for breakfast. I eat quite rare oat but sometimes I make an exception like today.  This baked oatmeal is easy and fast recipe.

Recipe for baked oatmeal with banana and fig.

Servings: 2-4, you need oven dish (diameter 23 cm)

Time: 20 min

Ingredients for baked oatmeal;

  • 5 dl organic rolled oats
  • 2-3 tbsp coconut oil
  • 150 g organic dried figs
  • 2 big and ripe banana
  • 2 tbsp raw cacao powder
  • cacao nibs

Instructions for baked oatmeal;

Step 1: Peel bananas and slice them and figs to oven dish.

Step 2: Put rolled oats, raw cacao powder and coconut oil to saucepan.

Step 3: Heat the ingredients few minutes and mix well.

Step 4: Add mixture now on top of bananas and figs. Add cacao nibs on top. Bake for 20min and 200C.

You can enjoy this baked oatmeal with ice cream or yogurt. Best to consume when hot, you can also reheat next day. Will remain in the fridge a couple of days (max 2).
